The power of seafood at a cookout is an amazing experience that is often passed down from generation to generation. Having all your family and friends come together to eat crab, lobster, and other Cajun cuisines is tradition many of us share in our household. That southern influence within the food comes with so much patience and love. Jermaine J Paddio is keeping this tradition alive as he shares his passion for giving the people great food.
Shells and Tails 2 Geaux is a mobile food service that specializes in Cajun and southern cuisine in the Dallas-Fort Worth, Texas area. Paddio’s motive to start this business was his passion for cooking and making others feel good. Seeing the women in his life get down in the kitchen inspired him to learn how to become a great cook. As a native of Lafayette, Louisiana, southern hospitality was something that prompted Paddio to focus on his culture by adding certain elements to make his food stand out. The name Shells and Tails 2 Geaux was created based on the customers need for more food when you experience this finger licking cuisine.
If you are able to get ahold of Shells and Tails 2 Geaux through the food truck or catering, you will not be disappointed. All the food is served fresh and cooked just like your grandma did during a family event. A couple of the customer favorites that you can never go wrong with are the Cajun Munch Sampler and the Man Down platter. The Cajun Munch consists of some the juiciest shrimp and snow crab you will ever eat. It is also boiled in authentic Louisiana seasoning that is made from scratch. The Man Down platter was inspired by boxing champ and local DFW native, Errol Spence. His regular order of 2lbs of crab, corn, potatoes, and sausage became a tribute to a legend and loyal customer.
Sharing the Cajun experience with the world is an everyday task Paddio keeps pushing for as his clientele continues to grow. His main motivation to grow is family, which was the one source that guided him on this cooking journey. Being around the right people to keep you grounded and inspired has allowed this business to thrive. In the future you will see multiple storefronts and food trucks around the country. Keeping that traditional feeling by boiling fresh instead of steaming the food will always be a no brainer. Shells and Tails 2 Geaux will continue to give you that cookout feeling for years to come.
